You can use canned chickpeas if you prefer, but you are losing out on a particularly creamy texture that the dried ones, when cooked, retain.

◆ 1 cup dried kabali chana chickpeas (the normal golden variety found in the U.S., as opposed to kalichana, black chickpeas), soaked overnight in cold water plus ½ teaspoon baking soda, covering chickpeas by 2 inches (1 13-ounce can, drained, can be used instead)

◆ 2 small onions, or 1 large one

◆ 2 tomatoes

◆ 1-2 serrano chilies, depending on spiciness
